Homemade jams are the best. There is a while since I've replaced the purchase of these jams from the shelves of a supermarket, by making them at home, as my mother did when I was a child (well, and she still does ..). And when the raw material is the result of organic farming and is offered to us, it tastes even better!

How to:
Weight the pumpkin peeled and cut into cubes.
Sugar (preferably brown sugar): half the weight of the pumpkin
Lemon peel
Cinnamon stick
Leave the pumpkin in a pot covered by the brown sugar (I usually left it the evening before to cook the next morning). Cook over medium/low heat with the lemon peel and cinnamon stick and mix occasionally. When you reach the desired consistency turn off the stove. Add small pieces of walnuts and mix everything. Do not forget to remove the lemon peel and cinnamon stick before putting in jars.
